Without tolerating dairy, I’ve leaned on avocados as the fatty sub for cheese when eating tacos (basically daily) and salads. Adding guacamole to tacos adds a necessary element of flavor. Paleo Banana Blender Muffins

Growing up, I remember any time we had bananas that were too brown, I would beg my dad to make banana bread. We would get out that red and white checkered Betty Crocker cookbook, gather all the ingredients and make banana bread together. It had that special sugary sweet taste with a little bit of “we didn’t use a box to bake this” pride added in. It was the only thing I enjoyed cooking with my dad (who cooked everything, all the time).

The first time I made these muffins, I was instantly brought back to that Betty Crocker Banana Bread. All the feels came with it. While I haven’t had that bread in years, these taste just like I remember it. Actually, The Dad in this house said “these taste just like banana bread” when he first had one….

There’s put together moms and there’s me-unshowered, tired mom. Generally my day job has me frazzled and by dinner time, and a lot of times I don’t have a dinner plan. But I always have a back up meal as well as a stockpile of frozen fruit in the freezer for smoothies.

Creamy Strawberry Ginger Green Smoothie

I’ve been on a ginger kick lately. I’m recovering from a gluten/sugar bender that has sent my body into full autoimmune flare mode. I have been doing all the things to try to recover as fast as possible, including drinking ginger tea-despite the 110 degree temperature outside.

Not being one to waste some perfectly good ginger pieces used in tea, I have been adding them to smoothies. I think I have discovered a new family favorite around here.

5 Ingredient Paleo Chocolate Sun Granola

Last week I was frantically trying to get the kids and myself ready to tackle the busy day. 30 minutes before I was supposed to start work, I got a call that my childcare plans fell through for the day. This also meant I had to figure out breakfast.

All the kids wanted was cereal. The Dad loves to buy an organic gluten-free cereal that’s really good, but full of sugar. I’m not down to load the kids up with refined sugar for health reasons of course (we save those times for donuts!), but my kids literally turn into Tasmanian Devils when they have sugary cereal for breakfast. I’m not talking the cute Tasmanian Devil animal, I’m talking the Looney tunes character (did I just age myself?). They get nuts….
