Paleo Banana Blender Muffins

Growing up, I remember any time we had bananas that were too brown, I would beg my dad to make banana bread. We would get out that red and white checkered Betty Crocker cookbook, gather all the ingredients and make banana bread together. It had that special sugary sweet taste with a little bit of “we didn’t use a box to bake this” pride added in. It was the only thing I enjoyed cooking with my dad (who cooked everything, all the time).

The first time I made these muffins, I was instantly brought back to that Betty Crocker Banana Bread. All the feels came with it. While I haven’t had that bread in years, these taste just like I remember it. Actually, The Dad in this house said “these taste just like banana bread” when he first had one….

Paleo Blender Blueberry Muffins

When I was in high school, my favorite breakfast was blueberry muffins. My parents used to buy a giant tray of muffins from Costco every couple of months. The tray had blueberry, banana nut and chocolate chip muffins. Blueberry was always my breakfast of choice. This tray of muffins was delicious because it was as close to fresh-baked muffins as we got in our house.

Let’s not feel guilty about forgetting to bake those 15 breakfasts in 7 hours you found on Pinterest.
With little effort, you can throw a few things in a blender, pour in a muffin tin and clean up is a breeze. In the 20 minutes of baking time you can make sure the kids have pants on and pour a cup of coffee.

Paleo Fruit and Veggie Muffins

Fruit and Vegetable Muffins/ egg free/nut free/paleo

Every toddler I have encountered loves muffins. Not every toddler loves vegetables, including, my oldest son, Ryder. When Ryder was a baby, first starting with finger foods, he loved muffins. I could give him anything in muffin form and he would gobble it up. Before he turned one, he couldn’t tolerate eggs. Insisting that my baby eat a paleo diet, I wanted to create a muffin that was sweet, tasty and full of vegetables. Ryder went to a nut free daycare at the time and I just couldn’t find many recipes that were paleo, egg free and nut free that I felt comfortable giving my baby/almost toddler. I especially had a hard time finding any paleo hidden veggie muffins….
