Without tolerating dairy, I’ve leaned on avocados as the fatty sub for cheese when eating tacos (basically daily) and salads. Adding guacamole to tacos adds a necessary element of flavor. Cheese has stolen the hearts of many. Most people can’t fathom a life without cheese. This butternut squash cheese sauce was created for two reasons. 1. For a dairy free cheeseburger macaroni (recipe coming soon!) and 2. As a cheesy sauce to slather on things. Turns out, I also really like to add it to some rice pasta with some roasted broccoli (upgraded mac and cheese) or mix with some shredded chicken and add to a vegan cauliflower tortilla for a quick snack….
