There are some meals that become instant family favorites. Some that are super easy and come together with little work. This skillet chicken and gravy is all the things. Every time it’s made, I hear bold declarations like “Why don’t we eat this once a week?” and “Mommy, this is the best chicken ever. I only like this chicken.” This is just one of those comfort meals, perfect for dinner any time of year.

Skillet chicken and gravy is a rich meal without much effort. With a buttery flavor from the ghee and just a hint of tangy lemon, this chicken and gravy will appease even the toughest critics. A dairy free cheeseburger macaroni that’s creamy, cheesy, gluten free, nightshade free and secretly loaded with vegetables, the whole family will love and ask for all the time.

This dairy free cheeseburger macaroni is surprisingly authentic to the real thing. It is cheesy and not too spicy (but still a little spicy) without dairy or nightshades. Before being free of gluten, dairy and nightshades, we really enjoyed this cheeseburger macaroni recipe. It was so simple and easy to throw together. This dairy free cheeseburger macaroni recipe is also fast and simple. The longest part of the process is making the butternut cheese sauce, which actually only takes 20 minutes and can be prepped up to a few days in advance….

Simple Paleo Tuna Salad

I am not a big seafood person. With the exception of tacos, I hardly eat fish. Mostly because I just don’t like it much. I want to love it, but I just don’t most of the time.

But tuna salad is different. It must be that it’s slathered in mayonnaise and seasonings to come together and taste amazing.

I was experimenting with the keto diet for a couple of hours one day and in preparing for that, I stocked up on cans of tuna due to its low carb/high protein content. When I started eating this tuna salad, it quickly became my most favorite breakfast. About as fast as I got over the keto diet, I made tuna salad on sweet potato toast my favorite breakfast….

Paleo Sloppy Joe Sliders

Every two years, my giant family gets together in Minnesota for a family reunion. It’s an awesome weekend and full of foods that I grew up eating and I’m always inspired to recreate those foods.

Two years ago, my cousin blew my mind on Sloppy Joe night when she and grabbed a handful of plain potato chips, added them to her Sloppy Joe sandwich and said “I just can’t eat a Sloppy Joe without the chips inside.” Obviously I copied her. She’s older and way cooler than me. Apparently I have been living under a rock to not know that trick. It was delicious….

Actually Delicious Paleo Turkey Burgers

I couldn’t eat beef (or a lot of things) for about four months. I was working though some auto immune stuff and eliminating beef was part of that. During that time, All I wanted was a burger. So I created a paleo turkey burger.
