This quick nightshade free guacamole comes together fast and gives your tacos the right dose of fat and spice. It’s the perfect cheese substitute in tacos and enchiladas.
Without tolerating dairy, I’ve leaned on avocados as the fatty sub for cheese when eating tacos (basically daily) and salads. Adding guacamole to tacos adds a necessary element of flavor. Having a nightshade free guacamole you can throw together quickly makes eating tacos on a nightshade and dairy free diet much more bearable.
When you can’t have nightshades, it’s not as easy to make guac as opening a jar of salsa and mixing with an avocado. I created this nightshade free quick guacamole a few years ago, before I was even nightshade free, because it’s quick and easy. It’s not overpowering so it doesn’t take over the tacos. While I thought this guacamole was too simple to warrant a place in the Basics section of this site, I changed my mind and decided to share with you today.
How to pick the perfect avocado
Most of the time in the grocery store, you will encounter avocados that aren’t ripe yet.
- Pick an avocado that is green, or mostly green. If an avocado is black and hard, it usually won’t yield a delicious ripe avocado.
- Make sure the avocado has a piece of the stem attached. When an avocado is not ripe, you won’t be able to easily remove the stem.
- When you think an avocado is ripe (soft), test the stem and see if it comes off easily. what is left under the stem should be green in color. If it’s brown, your avocado is likely overripe and a portion of the inside will be brown. All hope is not lost though, you will probably still have some use-able avocado there.
- A ripe avocado will be soft to touch (but not mushy).
Side note: if an avocado is a bit brown on the inside, taste it and if it’s not too bitter, it can still be used in smoothies.
Are avocados healthy?
If you’re a fan of Chelsea Handler, it’s likely you’ve heard her stand up where she mentions how living in LA she hears people say these new “health trends” constantly, like “sound baths and kale.” It’s what I think of when I start going on about avocados. They’re “so in right now” that everyone wants to talk about them. Honestly, there are reasons for it.
Avocados are full of fiber, good fats that help you absorb fat soluble vitamins and they contain vitamins like A, D, E and K. They are also creamy and delicious and are great on their own, as a guacamole or even in smoothies.
How to make nightshade free quick guacamole
First, cut the avocado in half, remove the pit (it should just pop out when you pull with your fingers) and skins and add avocado to a bowl.
Mash the avocado with a fork so it’s a chunky mush.
Add the remaining ingredients and stir to incorporate.
Enjoy right away for best results.
How to eat this guacamole
The possibilities are endless. Whatever you would do with regular guacamole, you can do with the nightshade free quick guacamole. Here are some favorite ways to eat:
- With tacos (multiple times a day/week are totally acceptable)
- As a dip for chips (Siete tortilla chips are grain free, as are plantain chips)
- Over sweet potato toast – the new avo toast
- Slathered on a cauliflower tortilla with a little shredded chicken – easy, fast and delicious
- By the spoonful because – yum
You can also add a little Vital Proteins (check Costco for the best deal) to the guac for a little extra protein (my favorite for sweet potato toast breakfast).
How to store guacamole for later
This recipe is small because it’s simple and so good fresh, but you could save it for a day or two in the refrigerator. Save the avocado pit and add it with the guacamole to a sealable container. Add a little bit more lime juice to the top, add the lid to the container and keep in the refrigerator.
