Last week I was frantically trying to get the kids and myself ready to tackle the busy day. 30 minutes before I was supposed to start work, I got a call that my childcare plans fell through for the day. This also meant I had to figure out breakfast.

All the kids wanted was cereal. The Dad loves to buy an organic gluten-free cereal that’s really good, but full of sugar. I’m not down to load the kids up with refined sugar for health reasons of course (we save those times for donuts!), but my kids literally turn into Tasmanian Devils when they have sugary cereal for breakfast. I’m not talking the cute Tasmanian Devil animal, I’m talking the Looney tunes character (did I just age myself?). They get nuts….

Paleo Blender Blueberry Muffins

When I was in high school, my favorite breakfast was blueberry muffins. My parents used to buy a giant tray of muffins from Costco every couple of months. The tray had blueberry, banana nut and chocolate chip muffins. Blueberry was always my breakfast of choice. This tray of muffins was delicious because it was as close to fresh-baked muffins as we got in our house.

Actually Delicious Paleo Turkey Burgers

I couldn’t eat beef (or a lot of things) for about four months. I was working though some auto immune stuff and eliminating beef was part of that. During that time, All I wanted was a burger. So I created a paleo turkey burger.

How to Set up a Paleo Kitchen

Let’s not feel guilty about forgetting to bake those 15 breakfasts in 7 hours you found on Pinterest.
With little effort, you can throw a few things in a blender, pour in a muffin tin and clean up is a breeze. In the 20 minutes of baking time you can make sure the kids have pants on and pour a cup of coffee.

How to Stock a Paleo Pantry

When first making the switch to a paleo diet, it can be really overwhelming. One of the difficult things is building up your ingredients so you can always make a meal with what you have. Every week you can create your shopping list from the meals you will be making, but it can be exhausting never having the condiments and repeating ingredients you need.

I created a list of the pantry items used most often with paleo cooking. I bulked some baking ingredients in here because for me, baking is essential. Feel free to eliminate those if baking isn’t your jam….
