Have I mentioned how much I dislike recipes that require you to use every dish and utensil on hand so you can spend 30 minutes cleaning?
That’s where High Speed Blender comes in (I currently use a Vitamix and we are in love). If you haven’t met High Speed Blender yet, let me tell you why you need an introduction (I have more information about high speed blenders in this post).
- You add things to your blender, blend them up and you create something that then you can eat (er, drink), cook or bake into something delicious. It’s similar to a “one pan meal” except for prepping (how cool would a bakeable blender be?!) .
- Here’s the kicker: you wash your blender by filling halfway with water and a couple drops of soap and blending for a minute or so, rinse it out and you’re done.
I will prepare anything I can in a blender. I avoid whisking in four different bowls, beating eggs separate mixing dry things separate, etc. at all costs.
These paleo chocolate chip muffins were the first blender muffin recipe I made. They were gone by 2 pm the first day I made them and I knew they were special. Both kids and The Dad really enjoy these muffins (I do too when I can get one before they’re gone). They’re fluffy, with just enough sweet. And they have cute little domes on the top that don’t fall down once they cool.
I tested this recipe a bunch more times, and came up with this final recipe to share with you. We love muffins in this house and I will definitely be sharing more muffin recipes with you. Stay tuned.

- Yield: 12 muffins 1x
Ingredients
- 3 large eggs
- 1/2 cup coconut milk
- 1/4 cup maple syrup
- 3 tablespoons coconut oil ( (solid or melted))
- 1/2 cup cashews
- 1 teaspoon vanilla
- 2 scoops Vital Proteins Collagen Peptides ( (optional))
- 1.5 cups blanched almond flour
- 1/4 teaspoon sea salt
- 1 teaspoon baking powder
- 1/4 cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees and line a baking pan with baking cups.
- Add all ingredients except chocolate chips to your blender. Blend for 45-60 seconds.
- Add the chocolate chips and pulse a couple times or stir them in by hand. I generally pulse two or three times. Some chips don’t remain whole, but it makes it a little easier than stirring.
- Fill muffin cups about 2/3 to 3/4 of the way full.
- Bake for 25 to 30 minutes. Let cool and enjoy!
Notes
These muffins aren’t overly sweet. If you like your muffins a little sweeter, you can add a little more maple syrup.

I use Enjoy Life Mini Chocolate Chips. I can usually find them on sale at Safeway, but you can find them here too.
