If paleo blender muffins aren’t your favorite, you haven’t tried them.
I don’t know anyone whose morning runs perfect and who doesn’t wonder what to feed the kids. I have this debate nearly every morning because I am the worst at planning breakfasts. Our morning generally consists of my two toddler boys running around naked and jumping off furniture.
For this reason, I have fallen in love with muffins I can make by throwing things in a blender, placing in a muffin tin and letting my blender blend itself clean. There’s no refined sugar (unless you add chocolate chips) and these are made with almond flour, with healthy fats and protein (for an added protein boost, add two scoops of Vital Proteins). Also, kids love muffins. Easy and delicious (for grown ups too).
These muffins have a nice fluffy texture. I chose to blend the strawberries, which gets the strawberry flavor to burst into every bite. There’s just the right amount of sweet. Paleo Blender Strawberry Muffins

Description
Fast, easy and tasty paleo strawberry muffins you can blend and bake for quick breakfasts.
Ingredients
- 3 large eggs
- 1/2 cup maple syrup
- 2 cups fresh strawberries (about 16 whole strawberries)
- 1 tablespoon lemon juice
- 2 teaspoons vanilla extract
- 1/2 cup raw cashews
- 1 tablespoon coconut flour
- 1 + 3/4 cup almond flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees.
- Add all ingredients in order listed to blender.
- Blend until thoroughly mixed and cashews are blended into batter. About 45 seconds.
- Fill a pre-lined muffin tin 2/3 to 3/4 of the way full with batter.
- Place in preheated oven and bake for 20-25 minutes. The tops will be slightly golden and a toothpick will come out clean when they are ready.
Notes
You can add some more pizzazz to these by adding 1/4 cup- 1/2 cup of mini chocolate chips. These chocolate chips have sugar, but no dairy or soy. Stir them into the batter just before adding to the muffin tin.
