Quick and Easy Paleo Chicken Soup

October 7, 2017 by Jen 2 Comments

My dad is the soup king. He can take whatever ingredients are around and turn them into an amazing soup. A few years ago, my sister and I were finally interested in his soup super power, so we watched and asked questions as he made his delicious chicken soup to absorb the knowledge.

A couple of weeks later, my sister told me what happened when she tried to make Dad’s soup….

Super Sneaky Veggie Spaghetti (Paleo)

September 26, 2017 by Jen Leave a Comment

Look no further to find the perfect paleo spaghetti recipe. If you’re like me, you love spaghetti. You love the simplicity of spaghetti and the comfort of spaghetti. The problem is, the easy way to make spaghetti is to buy a jar of sauce, add some meat and top over noodles. If you are frantically trying to get your family to eat vegetables, you may find yourself desperately serving a side salad to the dismay of your toddler-who sees something green and puts a hand up to claim “I don’t like it.”…

Loaded Scrap Veggie Paleo Chili

September 12, 2017 by Jen Leave a Comment

Some folks see a leaf and declare it to be fall and get all things pumpkin ready. Here in southern California, I see 85 degree weather in sight and declare it’s time for chili (I also love all things pumpkin). That’s where this paleo veggie chili comes in.

I love any meal that I can load with vegetables and my boys won’t know. I especially love a meal that can be made quickly in an Instant Pot even more. This chili was made one day when I was in a hurry and needed to use up a bunch of miscellaneous vegetables in the fridge….

So you decided to make the transition to a paleo diet? A little bit lost on where to start and what to do? Every time you read a recipe, it mentions a gadget you don’t have in your new paleo kitchen?

I make paleo meals every single day. Sometimes multiple times a day. I’m not a chef, just the family cook who is trying to make healthy meals. I remember what it’s like to first make the transition from boxed food to making everything from scratch. I don’t have unlimited funds for fancy kitchen gadgets. These are the 10 kitchen gadgets I use just about daily in my paleo kitchen….

Paleo Fruit and Veggie Muffins

March 16, 2017 by Jen Leave a Comment

Fruit and Vegetable Muffins/ egg free/nut free/paleo

Every toddler I have encountered loves muffins. Not every toddler loves vegetables, including, my oldest son, Ryder. When Ryder was a baby, first starting with finger foods, he loved muffins. I could give him anything in muffin form and he would gobble it up. Before he turned one, he couldn’t tolerate eggs. Insisting that my baby eat a paleo diet, I wanted to create a muffin that was sweet, tasty and full of vegetables. Ryder went to a nut free daycare at the time and I just couldn’t find many recipes that were paleo, egg free and nut free that I felt comfortable giving my baby/almost toddler. I especially had a hard time finding any paleo hidden veggie muffins….

Quick and Easy Cashew Milk

March 13, 2017 by Jen Leave a Comment

Dairy free milks can be such a pain sometimes. For someone new to cooking from scratch, it can be difficult to bring yourself remember to soak nuts 8 hours in advance, then blend, then strain, then store. This easy cashew milk recipe comes together quickly, without soaking or straining, for a dairy free milk you can enjoy instantly.

Is cashew milk healthy?

There are cashew milk brands you can buy in a box from a grocery store. Often times those milks (similar to many almond milks) include ingredients like xanthan gum, guar gum or another additive to make the milk thicker or preservatives to keep it fresh. While many people tolerate these things, many of us don’t. This cashew milk recipe uses only two ingredients – cashews and water. Cashews contain vitamins and minerals such as calcium, potassium and magnesium, as well as a dose of healthy fats (source). Cashew milk is a healthy plant-based alternative to dairy milk.

How long does cashew milk last?

Since there aren’t any preservatives, homemade cashew milk won’t last as long as the boxed versions, but it will last about 4 days or so in a sealed container in the refrigerator. The best news is that if you know you will only need a small amount, you can half the recipe or make as little or as much as you would like using a 1:4 ratio of cashews to water.

Is cashew milk or almond milk better?

This depends on what you are using the milk for and personal preference. Cashew milk is easier and faster to make. If you are trying to focus on strict low carbohydrate diet, such as the keto diet, almonds are lower in carbohydrates than cashews.  Generally, cashew milk is a better substitute for dairy milk in recipes as It’s a bit thicker and more rich tasting, but if you are looking for a more neutral taste, almond milk is the way to go. Due to its richness, cashew milk also makes an excellent coffee creamer. If you like your creamer on the sweeter side, add a teaspoon or two of honey before blending.

What are some recipes with cashew milk?

If you are a mashed potato lover, this dairy free mashed potato recipe is terrific and uses cashew milk. It’s also great in smoothies, yogurt, chia puddings and ice cream. In fact, most of my smoothie recipes make a quick cashew milk within the smoothie so you never need to have any cashew milk (or any other milk) on hand.

The best part about homemade cashew milk? It’s easy!

If you have a dairy intolerance and a coffee addiction, you may be horrified to wake up in the morning to realize you forgot to soak your almonds for almond milk and you have no other coffee creamer. I mean, who wants black coffee when you are here to feed your warm, creamy coffee addition? This cashew milk is perfect for those mornings. Cashew milk makes an excellent coffee creamer and comes together fast enough that you don’t even need coffee running though your blood in order to follow the recipe.
