A real banana bread taste without refined sugar or grains and made in a blender in no time.
Ingredients

- 3 large eggs
- 3 medium ripe bananas
- 1/4 cup maple syrup
- 2 teaspoons lemon juice
- 2 teaspoons vanilla extract
- 1/2 cup (not roasted) pecan halves
- 2 cups blanched almond flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Optional
- 1/4–1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees and line a muffin tin with muffin cups.
- Add all ingredients into a high speed blender, in the order listed.
- Blend until smooth (about 45-90 seconds).
- Stir in chocolate chips, if using.
- Pour batter into muffin cups and fill 3/4 full.
- Bake for 20-25 minutes until the tops are slightly golden and a toothpick comes out clean.
