This quick nightshade free guacamole comes together fast and gives your tacos the right dose of fat and spice. It’s the perfect cheese substitute in tacos and enchiladas.


  • 1 large ripe avocado
  • 1/2 teaspoon lemon or lime juice
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cumin
  • 2 tablespoons diced yellow onion


  1. Cut the avocado in half, remove the pit and skins and add to a bowl.
  2. Mash the avocado with a fork so it’s a chunky mush.
