Dairy free milks can be such a pain sometimes. For someone new to cooking from scratch, it can be difficult to bring yourself remember to soak nuts 8 hours in advance, then blend, then strain, then store. This easy cashew milk recipe comes together quickly, without soaking or straining, for a dairy free milk you can enjoy instantly.
Is cashew milk healthy?
There are cashew milk brands you can buy in a box from a grocery store. Often times those milks (similar to many almond milks) include ingredients like xanthan gum, guar gum or another additive to make the milk thicker or preservatives to keep it fresh. While many people tolerate these things, many of us don’t. This cashew milk recipe uses only two ingredients – cashews and water. Cashews contain vitamins and minerals such as calcium, potassium and magnesium, as well as a dose of healthy fats (source). Cashew milk is a healthy plant-based alternative to dairy milk.
How long does cashew milk last?
Since there aren’t any preservatives, homemade cashew milk won’t last as long as the boxed versions, but it will last about 4 days or so in a sealed container in the refrigerator. The best news is that if you know you will only need a small amount, you can half the recipe or make as little or as much as you would like using a 1:4 ratio of cashews to water.
Is cashew milk or almond milk better?
This depends on what you are using the milk for and personal preference. Cashew milk is easier and faster to make. If you are trying to focus on strict low carbohydrate diet, such as the keto diet, almonds are lower in carbohydrates than cashews. Generally, cashew milk is a better substitute for dairy milk in recipes as It’s a bit thicker and more rich tasting, but if you are looking for a more neutral taste, almond milk is the way to go. Due to its richness, cashew milk also makes an excellent coffee creamer. If you like your creamer on the sweeter side, add a teaspoon or two of honey before blending.
What are some recipes with cashew milk?
If you are a mashed potato lover, this dairy free mashed potato recipe is terrific and uses cashew milk. It’s also great in smoothies, yogurt, chia puddings and ice cream. In fact, most of my smoothie recipes make a quick cashew milk within the smoothie so you never need to have any cashew milk (or any other milk) on hand.
The best part about homemade cashew milk? It’s easy!
If you have a dairy intolerance and a coffee addiction, you may be horrified to wake up in the morning to realize you forgot to soak your almonds for almond milk and you have no other coffee creamer. I mean, who wants black coffee when you are here to feed your warm, creamy coffee addition? This cashew milk is perfect for those mornings. Cashew milk makes an excellent coffee creamer and comes together fast enough that you don’t even need coffee running though your blood in order to follow the recipe.
