Date Sweetened Caramel Latte Coffee Creamer

A bottle of paleo coffee creamer that tastes like a caramel latte when added to coffee. Enough to use for a week of morning coffees. Perfect for cold mornings or hot days.


  • 1 cup dates
  • 1 tablespoon + 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cup raw cashews
  • 3/4 cup canned coconut milk
  • 13/4 cup water
  • 1/2 teaspoon peppermint flavoring (optional)*
  • Brewed coffee


  1. Add all ingredients to a high speed blender.
  2. Blend on high for 60-90 seconds.
  3. Mix into hot or cold coffee. About 1/4 cup of creamer for every 1 cup coffee does the trick.


*I use this peppermint flavoring. If you use peppermint extract, you may need to cut that in half. For strict paleo followers: this flavoring contains sunflower oil, which is not technically paleo.
