There’s something about the fall that just goes with caramel. And of course pumpkin. But since last week was all about pumpkin spice lattes and pumpkin spice muffins, today is about caramel vibes.
Most mornings I enjoy just cashew milk in my coffee and prefer something simple and not sweet. But in the fall, I am always looking for a paleo coffee creamer that gives me all the fall feels. Today I bring you a quick and easy caramel latte.
When I was in college, a caramel latte was my favorite afternoon coffee. It was always my drink of choice when I needed to run errands or sit and study. It put me a weird euphoric state. Most likely from the heaps of sugar and caffeine. I’m reminded of that feeling every fall. And I usually break down and hit up the local coffee shop for a fix.
But we all know those sugary drinks with the artificial sweeteners leave you feeling less than awesome later. This creamer doesn’t have any of those artificial things and is sweetened with only dates.
There’s no cooking involved. Just blend, serve and store the rest for later.
I love adding a little peppermint flavor to this creamer. While the idea of caramel and peppermint sounds bizarre, the flavors actually do a nice little dance in your mouth. I dare you to live on the edge and try it.
This treat can be enjoyed hot or cold. Take 10 minutes to make a bottle of this creamer and drink it all week long.

Date Sweetened Caramel Latte Coffee Creamer
- Total Time: 10 minutes
- Yield: 4 cups 1x
Description
A bottle of paleo coffee creamer that tastes like a caramel latte when added to coffee. Enough to use for a week of morning coffees. Perfect for cold mornings or hot days.
Ingredients
- 1 cup dates
- 1 tablespoon + 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3/4 cup raw cashews
- 3/4 cup canned coconut milk
- 1–3/4 cup water
- 1/2 teaspoon peppermint flavoring (optional)*
- Brewed coffee
Instructions
- Add all ingredients to a high speed blender.
- Blend on high for 60-90 seconds.
- Mix into hot or cold coffee. About 1/4 cup of creamer for every 1 cup coffee does the trick.
Notes
*I use this peppermint flavoring. If you use peppermint extract, you may need to cut that in half. For strict paleo followers: this flavoring contains sunflower oil, which is not technically paleo.
